I'm just curious here, but I was recently told that major motion
picture post production studio's roll off everything above 4k to 5k
before mixing the film. Can anyone confirm that? I typically dump
everything above 12k and thought that even those frequencies were a
little much to roll off at times.

Absolutely false.
Whoever told you that has no idea what he/she is talking about.
There is no "standard" for high frequency roll off of production dialog
tracks in post, but I think your 12k figure is much closer to the
average than the ludicrous 4 to 5k you quoted.

6.5k?! Mono optical that is. A decent optical Dolby-Stereo SR track
goes way higher.

Well optical soundtracks are only good to about 6.5K, so maybe that's what he's
talking about.
